Learn recipes, stir fry and cutting techniques, as well as identification of ingredients to be able to produce healthy, quick, economical meals. Join us and enjoy this fresh and inovative cooking style. Note: A food fee of $15 will be collected at the start of the class meeting.

03254 Chocolate: A Divine Decadence
Chocolate is the best, most popular flavor and is definitely decadent! It can be white, dark, cocoa, and used as a sweet or a savory. There will be a selection of recipes, Ganache for truffles, sinful Chocolate Mousse, Red Chile Chocolate Mole Sauce for chicken, Flourless Italian Chocolate Cake and more. We will discuss selection and types of chocolate, proper storage, melting and tempering. Everyone will have a chance to get their hands in the chocolate. Note: A food fee of $15 will be collected at the start of the class meeting.

Learn basic cooking techniques as well as developing new recipes to please all. You will learn how to read a recipe, how to put it all together in a timely manner and have the confidence to try new things. This class is a must for those who want to go forward in their culinary experience! You will learn knife skills, how to properly cut vegetables and fruit, and how use substitutions in recipes and have the same end result. Note: A food fee of $15 will be collected at the beginning of the class meeting.

Learn to combine, chop, mix and experiment with traditional and exotic spices as well as local New Mexico spices. After creating your spices and rubs you will apply them to a variety of meats, vegetables and sauces to spice up your favorite dish! You will also learn to create oils and homemade vanilla!
